Anyone know if it would be possible to some how install vdj onto an iPad?

No, it's not.
However you can use servers such as VNC (Windows & Mac) or the inbiult RDP (Windows) to bring your PC screen on to the ipad.
iTeleport app is pretty good but the screen refresh rate is quite poor so no use for video.
I have been doing this for some time now and it does work well enough to use for pub gigs etc.

You can also use an app like touch OSC to control the software.
