I would love to see the vertical waveform offered in the pro mode as a option instead of the scratch screen

You probably want the Performance version (Vertical variant) of the default skin then.
The Pro mode tries to give you the most functionality available on screen, and the center display is key in that.
Putting the waveform in the center works directly against that, but fits in perfect for the Performance version (where you only want things needed for performing a DJ mix live).
