I have a windows desktop that i used with my DDJ1000 and have everything (all program files all database files all stems all music) saved to an external exFAT formated USB SSD. if I get a macbook will i be able to just plug this external into it and all my settings etc will work exactly the same? aka will i be able to use both the windows desktop and a mac laptop with the same files other than the program itself

You can't access the home folder from an external drive on a Mac. If the files are on the drive and the database is on it then that will be fine, but everything else in the home folder has to be on the mac itself in a hidden location.
That's one of the main reasons I stick with Windows PCs as I keep my VDJ settings etc on a separate partition or drive.
