I’ve been starting to learn how to mix on Virtual DJ, and now I want to move on to physical mixing on a FLX4 board. I find myself using the “BEAT, INSTRUMENTAL and VOCAL” equalizers way more the “LOW MID HIGH” ones on VDJ, and I’ve been wondering if it’s possible for me to map the “LOW MID HIGH” knobs on my board to the “BEAT, INSTUMENTAL, VOCAL” ones on VDJ.

You don't need to remap them.
You can set in options the desired mode of operation for the EQ knobs.
If you select "EZRemix" then the EQ knobs will behave exactly as you described
