how do i map the master volume level to vdj?

I doubt you can map the master volume knob on the MC7000
I think it's hardware based - so not something that sends midi signals to the laptop
It's the same thing on for instance the MC3000

So can i set the knob on vdj to set at say 3 oclock on load?

Yes, if you always want the master volume in VDJ to be at 3 o'clock when you open it you can set it in the ONINIT on the keyboard mapping by putting in:
master_volume 82%
