I have some videos that have an audio format in 5.1 surround which translates to 6 channels at 448 kbps. For the purposes of playing them with Virtual DJ would they sound better if I converted them to a 2 channel stereo format?

VirtualDJ will already do that conversion for you, so unless you want to convert it with specific settings it should be fine already.

If you were rippping the original source, then I may recomend you to do this using the stereo audio version of the material you have and check it vs 5.1. Sometimes the original source for stereo output may have a different audio mixing and may or may not sound better than if is in 5.1 (for Stereo reproduction). If the source is already in 5.1 and you may convert to 2 channels, is not necessary because VirtualDJ already do it internally as already pointed out.
