I'm messing around with Skin Builder just to get the idea of how it works then I can have a bash at doing one myself. In Skin Builder, how do you save what you have created?

Are you referring to the djdad skin? That's actually just a skin, not really a "builder" for creating from scratch. There is no save.
If you want the latter, look at Skin Creator by JeremK (which has not been updated for VDJ 8, but can still be used as a starting point).
