I installed windows 7 on a friends laptop and re-installed his VDJ pro for him as well. He was never able to fully map it (going to follow instructions) however when it is plugged in causes laggy playback and the audio keeps skipping. What can cause this?

The MC6000 doesn't need mapping. It's natively supported in the latest VirtualDJ Pro. He should download the latest from http://www.virtualdj.com/download/updates.html or purchase the software from http://www.virtualdj.com/buy/index.html if he has not already done so. If it came with VirtualDJ LE, he's entitled to an upgrade discount.
Skipping, stuttering and other sound issues are caused by performance issues with his computer and/or incorrect configuration.

If he is not a scratch DJ, then using WDM instad of ASIO drivers is recommended (See above MC6000 page for details of how to configure this.)
