I want to know the difference between MIDI controllers and other controllers.
Like is there a distinct difference?

Which ones are better?

There are two different stands - MIDI and USB HID (Human Interface Device.) The later is superior - Please see http://www.virtualdj.com/wiki/HIDvsMIDI.html for an explanation.
There is no sound difference - The sound card (If the controller has one) is completely separate to the controller aspect. Sound cards typically use either USB or Firewire and the more expensive, generally the better the quality.
