I recently updated to the 2023 version of virtual dj on a 2016 Mac book (MacOS - Monterey Version 12.6.2) and all me previous settings from the previous version were lost. Can anyone guide me on how to fix this problem?

Perhaps a new installation and not an update ? If so, open VirtualDJ, goto Settings->OPTIONS tab and click on the small cog at the bottom-right to open VirtualDJ Home Folder.
Probably it's not /Documents, so all u need to do is to put your settings.xml file to the new Home Folder location
