I have all of my music on a NAS (network drive) mapped as M: ("M" for music!).
When I load tracks and adjust the beat grid, cue points, etc, it gets saved to the XML database file on the C: drive (C:\users\me\documents\virtual dj).
If I insert removal media the XML database file is stored on the root of the removal media.
Is there anyway to configure/trick Virtual DJ into thinking my network drive is also removal media so it saves the XML file on the network drive rather than my C: drive?

No.
The drive type is defined by your OS itself, not by VirtualDj.

Why is your XML file not with your music on the NAS? I have some files located on my Windows Server which is basically the same thing and there's a XML file in that folder with the music.

Because if I put it there it's ignored and VDJ uses the one on C: instead.
