On the pc version I used to be able to change this setting to 45, and now on mac it doesn't let me, even though my Mac is way more powerful. What's up with that?
I have a few mixes that are 1 hour long, and I'd like for them to load

Never tried it but you can play that long file without a problem.
It only will not load the hole track at one time.
It only load as much as needed but play the mix.
You can try to change at VDJ Config - Performance -> Memory to infinite!
BUT, a Mac is not a magic maschine who can handle everything.
Doesn't matter how nice the specs are ;-)

Already tried to change the settings, it just goes back to 15.
I know it will play the file, but I need to see the whole song like I used to on my crappy windows laptop.
MacBookPro13 has better specs than the windows laptop I had.

You can try changing the settings, on the Perform windows you are gonna find a "Memory" section, there change the time to 25 min or you can use a higher number, but dont put itto higher because the perform of the computer it is gonna be affected

This is the issue, I've been trying that, and as soon as I click "OK" and return to the settings, it's back at 15mm

Easily solved ...
Download the Registry/Plist tool and change the inMemoryLen value to 3600 for 60 minutes -- or use a value of -1 for 'infinite'
But, got it ... should be able to do it from within the normal interface ...
