does anyone know if there is a Dac-3 quick reference guide or that it even exsist? i got the document that came with the mapper.

There is no one specific 'guide' for the DAC-3 and using it with VirtualDJ. The readme document speaks directly to what the mapper developer programmed the interface to function with.
