I've used TotalRecorder to record my mixes, although I need about 1G free to record an hour or so without limiting resources, which is far too much.
Then I use Cool Edit 2000 or similar to shape the beginning and end of the mix as well as make all the tracks sound about the same loudness. This also takes up heaps of HDD space, but can be done after the gig.
What I need is a way to record my live mixes as MP3. I've tried using WaveRec, although it's all in german and I can't seem to set it up correctly.
Does anyone have any ideas/software I can try?

I use Blaze Media Pro to convert my wav mixes to mp3, it's easy to use and works well.

you can use winamp + shoutcast in background to record straight to mp3.. as added bonus sómeone can even listen your mix live if you have enough bandwidth out.
