I have a few high end controllers that I spin with... but my son got a Ion Discover DJ unit as a BDay gift a while back. It comes with Mixvibes which is cool, but I want to let him use it with my VDJ7 Pro setup... Is it possible?

Yes, if you look at the list of supported controllers here you can see that it's natively supported.
As for it playing musical notes, that just means its MIDI signal is being routed to the MIDI synth part of your computers internal sound card .
If you plug it in and run VDJ, it should be detected and show up under the mapper config.
